Mashed Cauliflower

1 large head cauliflower, cut into florets
1-1 ½ cups chicken broth
3 tablespoons butter or margarine
1 cup shredded sharp cheddar cheese
¼ cup grated Parmesan cheese
salt and pepper to taste
fresh parley to garnish

1. Steam cauliflower in microwave or over stove top until very soft and mushy.
2. Transfer cauliflower to a mixing bowl. Add butter or margarine, cheddar cheese, Parmesan cheese and 1 cup of chicken broth. Mash with a potato masher until the cheeses have melted and the cauliflower is smooth. Add additional chicken broth as needed to make a smooth product. Add salt and pepper to taste.
